Excellent recipe!! I made a pot of this soup this morning. Roasting the vegetables before making it into soup is a great tip!! Roasting brings out the flavour. I think this will become my number one go to recipe for Vegetable soup from now on. Thanks for sharing this delicious recipe. Jim 🙂
