Rather than discard a bag of “past their prime” HoneyCrisp apples I looked for an alternative. This recipe was quick and delicious. I served it still warm with a dollop of Greek yogurt. Ideal midday snack. Will definitely make again.

I made these cinnamon apples to serve with pancakes. Super easy using apple slicer and then knife to cut chunks. Due to arthritis in my hands peeling apples is difficult so I left the skin on and they cooked up just great. Cooked faster than the recipe so just keep an eye on the apples. Very tasty just following the ingredients as written. Will keep this for future use.
