Made this recipe using red, orange, and yellow peppers instead of red and green. Added some diced fresh spinach along with the peppers, onion, garlic and bacon. It was delicious and I would definitely make again.

Anyone make this for a morning potluck? I start work at 6am. Portluck is at 9 am. If I bake this before I leave can it sit out this long before serving?
