It could be a few things. 1) make sure you heat butter and sugars for 1 minute then beat for an additional minute after you add the egg and vanilla. Beating gives a shiny top. It’s possible sometimes you’re adding too much flour too. Try weighing it and using the metric measurements!

Hi there,
I make these often because when they come out good, they are so good. I would say 50% of the time, they don’t come out as they should, and I can’t figure out why.
I buy all fresh ingredients each time, because I initially thought it was a problem with my baking soda or powder. I can tell before they are done if they are going to be a good batch or not. A good batch has sort of a smooth top, light colored except for golden brown around the edges. An off batch, is really bumpy on the top, looks raised up in the pan and never settles down into the pan. The texture is is cakey instead of that dense, chewy deliciousness. Any ideas on where I’m going wrong?
